2 Weeks ago was the annual Spencer Picnic and yes, I’m finally getting around to posting about it. We go every year. I haven’t missed a year that I can remember, honestly. I even worked it one year.
This year, they had a bit of a different line-up and their entertainment Friday night was the George Kaye band. They play country music, they’re not too bad, but I’ve heard much better. We listened for a while then got bored and wandered around a bit, played some games, enjoyed the cool evening. When it got later on in the evening, we headed back to where we had parked at the edge of the park to wait for the fireworks to begin.I didn’t take many pictures. I didn’t bother with any on the grounds, especially since the batteries in my camera were starting to fade and I wanted to make sure they didn’t totally die on me. My favorite, however, is one that I took with the camera on sepia. I played around with the settings some and just absolutely loved the way this looked.
The one thing I don’t understand is where some people get the energy they have. I’ve noticed that the crowd for Music in the Park and for the music at Spencer Picnic was much the same, an older crowd, really. Some of them seem to have more energy than the young kids. One couple was celebrating their 59th wedding anniversary and they were dancing up a storm. It’s amazing. I wish I had the energy they do.
Okay, I know I’m way behind on posting and my ‘to post about‘ list keeps getting longer. I’m sorry, I just haven’t felt up to posting a whole lot lately. I’m going to work on at least this update, though.
I went to the doctor on the 15th for a checkup. I needed new prescriptions and it’d been since April since I’d been in. I went, got yelled at for walking out on the last batch of blood work, got told I needed to have blood drawn the following week. I asked for something to help me sleep and something for my allergies. I got an anti-histamine that is supposed to help with both problems. They work okay for the allergies. They work kind of okay for sleeping.
I had one really violent reaction to them earlier this week because I was fighting off going to sleep after taking it. I had the worse flu-like symptoms, shaking, shivering, burning up. I’ve been fine ever since, but man that was wicked.
Rob is doing well with his diabetes, thankfully. He’s doing great with the change of diet and I’m working on cooking things that are much more diabetic friendly than I have been.
Health is overall at a good level here for now. Thank god.

At the request of Amber, I give you a banana bread recipe. This is my grandmother’s recipe so I know it’s good.
Banana Bread
2/3 cup sugar
1/3 cup shortening
2 eggs
1 3/4 cup flour
2 tsp baking powder
1/4 tsp baking soda
1/2 tsp salt
1 cup mashed bananas
Cream together 2/3 cup of sugar, 1/3 cup shortening, add 2 well beaten eggs, add 1 3/4 cup flour, 2 tsp baking
powder, 1/4 tsp soda, 1/2 tsp salt and 1 cup mashed bananas. bake 350 degrees for 1 hour or until pick comes out
clean. makes 1 loaf.
Blueberry Cheesecake Muffins
Ingredients
* 1 1/2 cups all-purpose flour
* 1/3 cup sugar, PLUS
* 2-3 Tablespoons sugar (depending on sweetness of the berries)
* 3 teaspoons baking powder
* 1/2 teaspoon salt
* 1/2 teaspoon almond extract ** Can be left out **
* 1/4 cup melted butter
* 1/3 cup plain yogurt ** I used Vanilla Yogurt instead **
* 1/2 teaspoon vanilla extract
* 2/3 cup ricotta cheese
* 2 eggs
* 1 cup blueberries
Directions
1. Preheat oven to 375ºF. Grease 8-10 muffins tins.
2. In a large bowl combine with a wire whisk the flour, sugar, baking powder, and salt until well blended.
3. In a medium-sized bowl beat together the almond extracts, vanilla extract, melted butter, ricotta cheese, and eggs. Add to flour mixture. Carefully fold in the blueberries. Batter will be soft and lumpy.
4. Fill the muffin cups 2/3 full and bake 20 minutes
